📄Ingredients
For the batter:
• 1 cup besan (gram flour)
• 1 tbsp semolina (sooji/rava)
• 1 tsp ginger-green chili paste
• 1 tbsp sugar
• Salt accordingly
• 1 tbsp lemon juice or citric acid (¼ tsp)
• 1 tbsp oil
• ¾ cup water (add water to make a smooth)
• 1 tsp Eno fruit salt (or ½ tsp baking soda as alternative)
For tempering:
• 1 tbsp oil
• 1 tsp mustard seeds
• 1 tsp sesame seeds (optional)
• 2 green chilies, slit
• 8–10 curry leaves
• 2 tbsp water
• 1 tsp sugar (for sweet tempering)
• Chopped coriander leaves and grated coconut (for garnish)
📝Instructions

  1. Prepare the Batter:
    • In a mixing bowl, add besan, semolina, salt, sugar, ginger-chili paste, lemon juice, and oil.
    • Slowly add water and whisk well to form a smooth batter. No lumps.
    • Let it rest for 15–20 minutes.
  2. Prepare the Steamer:
    • Boil water in a steamer or deep pan with a stand.
    • Grease a round plate or cake tin with oil.
  3. Add Eno & Steam:
    • Just before steaming, add Eno fruit salt to the batter.
    • Mix quickly in one direction. The batter will become fluffy.
    • Pour immediately into the greased plate and place in the steamer.
    • Cover and steam for 15–20 minutes on medium flame.
  4. Check & Cool:
    • Insert a toothpick. If it comes out clean, it’s done.
    • Let it cool slightly, then cut into square or diamond pieces.
  5. Temper the Dhokla:
    • Heat oil in a small pan. Add mustard seeds. Let them splutter.
    • Add green chilies, curry leaves, sugar, and water.
    • Pour this tempering evenly over the cut dhokla into pieces.
  6. Garnish & Serve:
    • Garnish with chopped coriander and grated coconut if desired.
    • Serve warm or at room temperature with green chutney or sweet tamarind chutney.
    🔥Tips:
    • Use Eno for best results; baking soda may leave a slight aftertaste.
    • Don’t overmix after adding Eno; steam immediately.
    • You can add a pinch of turmeric to the batter, but too much may react with Eno and make the color reddish.
    Green Chutney
    Ingredients:
    • 1 cup coriander, ¼ cup mint (optional, for good taste)
    • 1–2 green chilies, ½ inch ginger
    • 1 tbsp lemon juice, salt, ½ tsp sugar
    • Water to blend
    Steps:
    • Blend all ingredients smooth.
    • Adjust spice, salt, and lemon as per your taste.
    • Serve fresh or chill.
