How To Make Chilli Potatoes Recipe

For the crispy potatoes:
• 3 large potatoes (peeled & cut into thin fingers or wedges)
• 2 tbsp corn flour
• 2 tbsp all-purpose flour (Maida)
• 1/4 tsp black pepper powder
• Add salt accordingly
• Water (as needed to coat)
• Oil (for deep frying)
For the sauce:
• 1 tbsp oil
• 1 tbsp chopped garlic
• 1 tbsp chopped ginger
• 2-3 green chilies (chopped)
• 1 small onion (cubed or sliced)
• 1 small capsicum (green bell pepper, cubed)
• 2 tbsp soy sauce
• 1 tbsp red chili sauce
• 1 tbsp tomato ketchup
• 1 tsp vinegar
• 1 tsp sugar (optional, only for balancing flavors)
• 1 tsp corn flour mixed with 2 tbsp water (slurry, optional for thickening)
• Salt accordingly
🍳 Instructions
Prepare the potatoes:
- Soak the cut potatoes in water for 10–20 minutes to remove excess starch.
- Boil them until just soft (do not overcook).
- Drain and pat and dry completely.
- Mix cornflour, maida, salt, pepper, and a little water to form a thick coating batter.
- Toss the potatoes in the batter to coat well.
- Fry the potatoes:
- Heat oil in a deep pan.
- Deep fry the coated potatoes until golden and crispy.
- Remove and drain on paper towels. (For extra crispiness double frying it.)
Make the sauce: - In a pan, heat 1 tbsp oil.
- Add garlic, ginger, and green chilies. Saute until fragrant.
- Add onions and capsicum. Stir-fry on high heat for 1–2 minutes (keep them crunchy).
- Add soy sauce, chili sauce, ketchup, vinegar, and sugar.
- Mix well and add salt accordingly .
- Add the cornflour mix if you want a slightly thick coating sauce.
- Toss in the fried potatoes and coat evenly.
🥣Finish & Serve:
• Garnish with chopped spring onions, coriander, white sesame seeds.
• Serve hot as a snack or side dish with noodles or fried rice.
