For the crispy potatoes:
• 3 large potatoes (peeled & cut into thin fingers or wedges)
• 2 tbsp corn flour
• 2 tbsp all-purpose flour (Maida)
• 1/4 tsp black pepper powder
• Add salt accordingly
• Water (as needed to coat)
• Oil (for deep frying)
For the sauce:
• 1 tbsp oil
• 1 tbsp chopped garlic
• 1 tbsp chopped ginger
• 2-3 green chilies (chopped)
• 1 small onion (cubed or sliced)
• 1 small capsicum (green bell pepper, cubed)
• 2 tbsp soy sauce
• 1 tbsp red chili sauce
• 1 tbsp tomato ketchup
• 1 tsp vinegar
• 1 tsp sugar (optional, only for balancing flavors)
• 1 tsp corn flour mixed with 2 tbsp water (slurry, optional for thickening)
• Salt accordingly
🍳 Instructions
Prepare the potatoes:

  1. Soak the cut potatoes in water for 10–20 minutes to remove excess starch.
  2. Boil them until just soft (do not overcook).
  3. Drain and pat and dry completely.
  4. Mix cornflour, maida, salt, pepper, and a little water to form a thick coating batter.
  5. Toss the potatoes in the batter to coat well.
  6. Fry the potatoes:
  7. Heat oil in a deep pan.
  8. Deep fry the coated potatoes until golden and crispy.
  9. Remove and drain on paper towels. (For extra crispiness double frying it.)
    Make the sauce:
  10. In a pan, heat 1 tbsp oil.
  11. Add garlic, ginger, and green chilies. Saute until fragrant.
  12. Add onions and capsicum. Stir-fry on high heat for 1–2 minutes (keep them crunchy).
  13. Add soy sauce, chili sauce, ketchup, vinegar, and sugar.
  14. Mix well and add salt accordingly .
  15. Add the cornflour mix if you want a slightly thick coating sauce.
  16. Toss in the fried potatoes and coat evenly.
    🥣Finish & Serve:
    • Garnish with chopped spring onions, coriander, white sesame seeds.
    • Serve hot as a snack or side dish with noodles or fried rice.
