Ingredients:
• 2 tbsp olive oil
• 1 medium onion, chopped
• 3 garlic cloves, minced
• 1 tbsp tomato paste (optional, but adds richness)
• 6–8 fresh ripe tomatoes, chopped
• 2 cups vegetable broth
• 1 tsp sugar
• Salt and black pepper, to taste
• 1/2 tsp dried basil or thyme (optional)
• 1/2 cup unsweetened plant milk or coconut milk (optional, for creaminess)
• Fresh basil or parsley for garnish (optional)
Instructions:
- Sauté Veggies:
• Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until soft and slightly golden (about 7 minutes). Stir in garlic and cook for another 2–3 minutes. - Add Tomatoes:
• Add tomato paste and cook for 1 minute to deepen the flavor. Add the tomatoes and their juices. Break up whole tomatoes with a spoon. - Simmer:
• Pour in the vegetable broth. Add sugar, herbs, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes. - Blend:
• Use an immersion blender to puree the soup right in the pot, or carefully transfer to a blender and blend until smooth. - Add Creaminess (Optional):
• Stir in plant milk or coconut milk for a creamy texture. Adjust seasoning as needed. - Serve:
• Pour into bowls, garnish with fresh basil or a swirl of coconut milk.
